Based on the latest information about human microbiome, the number of mammalian cells contributes to only 42% of the total of healthy human body. The rest of cells are a consortium of microbial cells of different groups who play major role in human healthy life. These microbes are commonly named as probiotics and contribute in the production of many bioactive metabolites in human body with many functional roles. They act as source of vitamins, immune system enhancers, compete with microbial pathogens through antibiotic production, and many other bioactivities. Therefore, continuous supplementation of human body with these beneficial microbes is necessary to sustain the healthy life of individual. For many years, industrial production of bacterial probiotics belonging to Lactobacillus, Bifidobacterium and Bacillus was extensively studied. However, little information is available for large scale production of probiotic yeasts. In this work, techno-industrial platform design for production of three types of probiotic yeasts will be presented namely: Saccharomyces boulardii and Klyveromyces lactis, and selenium enriched probiotic Saccharomyces boulardii. Different methods of bioprocessing optimizations and cultivation strategies for each type of cells have been studied to improve biomass production in small scale. Furthermore, the processes have been scaled up to semi-industrial scale production to develop complete industrial platform.
