The sweet potato waste was utilized to produce microbial oil by yeast. Based on the lab scale experimental conditions, the results obtained and the unit operations involved, a process flow sheet for a plant capacity of 5 million gallons of lipids per year was developed. The economics of lipids production was evaluated and the critical steps for cost reduction were identified.
